Black Beans (Pritikin)

Ingredients:
4 cups Black Beans (uncooked)
6 Red Onions (diced)
1 cup Garlic (chopped)
2 tbsp Cumin
1 tbsp Coriander
1 1/2 Carrots (Diced)
2 tsp Pepper (freshly ground) 

1 Chipotle Pepper
3 quarts Water
1/2 bunch Cilantro (picked and chopped)


Directions:
  1. Soak beans overnight, rinse, and drain. 
  2. In a large stockpot, bring to a boil all ingredients, except cilantro. 
  3. Then reduce heat, cover, and simmer until beans are soft, about 1-1/2 hours.
  4. When ready to serve, mix in cilantro and remove chipotle pepper.
