Ingredients
- 2-3 Cloves Garlic, minced
- 2 Tbsp Butter
- 3 Tbsp Tomato Paste
- 1 oz Vodka
- 1 c Heavy Cream
- 1/4 c Reserved Pasta Water
- Melt butter and add tomato paste and garlic. Cook until paste is brick red in color
- Add vodka and whisk until alcohol is evaporated ~3-5 mins.
- Add half of the cream and whisk and turn heat to simmer until it's bubbling
- Add the rest of the cream and whisk again. Allow to simmer and bubble until the pasta is done cooking. If it thickens too much, use pasta water to thin out using a little at a time.
