Ingredients:
5 pounds small boiling potatoes
1 cup chopped celery (about 4 ribs)

1 teaspoon grated lemon zest
2 tablespoons fresh lemon juice
1 teaspoon sugar

Directions:
- Boil potatoes for 8-10 mins until firm but cooked.
- While potatoes are boiling, whisk mayo, lemon zest, lemon juice, and sugar together in a small bowl.
- Cool potatoes in an ice bath and then strain to remove as much water as possible.
- In a large bowl, combine all ingredients and toss gently to coat all the potatoes evenly.
- Cover the bowl and let it sit in the fridge for 15 minutes for the flavor to soak into the potatoes.
