Ingredients:
Chicken Marinade:
- 2 lb chicken thighs, boneless, skinless (or skinless, boneless chicken breast)
- 2 Tbsp olive oil
- 2 tsp garlic powder
- 1 tsp coriander
- 1 tsp oregano
- Pinch thyme
- Pinch onion powder
- Pinch paprika
- Pinch turmeric
- Pinch cardamom
- Salt & Pepper
- Lemon Juice
Basmati Rice:
- 2 cups of basmati rice
- 2 tsp garlic powder
- 1 tsp coriander
- 1 tsp oregano
- Pinch thyme
- Pinch onion powder
- Pinch paprika
- Pinch turmeric
- Pinch cardamom
- Salt & Pepper
- 3 cups water or stock
White Sauce:
- 1/2 Yogurt
- 1/2 cup Mayo
- 1 Tbsp Parsley
- Lemon Juice
- Salt
- Garlic Powder
Salad:
Tomato
Cucumber
Lettuce
Instructions:
1. Put chicken in bowl and add all spices and lemon and marinade
2. Cook the chicken in a frying pan with olive oil
3. Roast Rice in the chicken bits, add spices and water. Allow to boil, lower heat to simmer and cover for 10-15 mins.
4. Serve in a bowl
