1 1/4 cups Cornmeal
3/4 cup All Purpose Flour
1/4 cup Packed Brown Sugar + 2 Tbsp. for sprinkling
2 tsp. Baking Powder
1/2 tsp. Baking Soda
1 tsp. Kosher Salt
3/4 cup Milk
1 (14.75 oz) Sweet Creamed Corn
1 (8 oz) Mascarpone Cheese
2 Large Eggs
1 Stick Melted Butter
Directions:
- Heat oven to 450 Degrees
- Whisk Cornmeal, Flour, Brown Sugar, Baking Powder, Baking Soda, Salt
- Whisk Milk, Creamed Corn, Mascarpone, and Eggs.
- Gently stir wet mixture into dry.
- Add melted butter to the mixture.
- Pour batter into skillet and sprinkle with brown sugar.
- Bake for 25 mins.
