Ingredients:
2 Avocados (pitted and cut into 1/2-inch chunks)
2 Limes (juiced)
1/2 Red Onion (thinly sliced)
1-2 lbs. Watermelon (cut into 1-inch chunks)
1 tbsp Extra Virgin Olive Oil
1/2 bunch Cilantro (chopped)
Kosher Salt and Pepper to taste
Directions:
- Put avocado into a large bowl and dress with lime juice.
- Add red onion, watermelon, and EVOO
- Drizzle with olive oil and toss with fresh cilantro, salt, and pepper.
